I'm making a blackberry wine and forgot to add peptic enzymes to my 1 gallon batch. I don't have any on hand so I was just gonna make it without it. Would it be ok without it? It's my first attempt at making wine.
 
Sure you can leave pectic enzyme out. It helps to dissolve the fruit pectins in the fruit, to get more juice out of the fruit as well as to help avoid a pectin haze. Blackberries aren't that high in pectin, so you may not even notice the difference. If you do get a pectin haze, you can always add the pectic enzyme later on.
