forgot the wax

bought a cheese making kit from AHS early last year and forgot about it until now (duhh).
just made some farmhouse cheddar thursday and it is currently drying but i forgot to order wax.
i have some coming but it will be way past the 3 day drying time recommended before waxing.
would vacu-sealing be a stop gap until the wax arrives?

It should. Either way you're sealing the air out and any chemical reactions in.

If the bag starts to expand I'd cut it open. You wouldn't want anything bad going on inside there.

is there any reason not to just vacum seal instead of waxing? i mean keeping it vacum sealed during aging untill consumed instead of replacing the vacum seal with wax once it arrives

i ordered one of the hard cheese kits and vacum sealing would be much easier and cheaper than waxing

I read in Carrols book that vacuum packaging stops the aging process for cheese.
