For my next beer I want to step it up. How?

So I have been using Kits , like the true brew kit, but for my next batch I want to make something a little better/ more difficult. What is the next step after extracts? I am really confused and have been doing some research but I am still stuck. If I wanted to use less processed ingredients, like extracts, what would I use? Could someone help me out on this?

Try a Nut brown Ale. IT requires steeping grains and of a bit of temp control during fermentation.
