I guess I should ask before I ruin a counter-top.... Is there a way to stop or prevent overflowing foam? Either before I see it, as I see it, or after it starts erupting.

Based on what happened with my juice bottle wine and the feeble attempt I made to "fix" it, I feel like swirling, shaking, and tapping wont help...

Lower the ferm temps by placing the fermenters in a cooler place and/or use swamp coolers.
Fermentation creates heat, so your fermenting meads/wines are a few degrees warmer than the ambient temperature.

Leaving a larger headspace also reduces or prevents blow off.
