If you like the new Flying Dog Imperial IPA and want to brew it yourself, good news! I emailed the head brewer and he was gracious enough to give me a recipe. Here it is:

Hey Justin,

Glad you got a chance to try The Truth! I can certainly help you out with a recipe so you can create it at home:



Grist:

Pale Brewer’s malt 80-90%

Munich 5-9%

White Wheat 4-7%

Acidulated Malt 1-4%

C-40 1-3%



90 minute boil-

At 90 min Use a clean bittering variety and shoot for about 70-80 IBU

At 30 add CTZ for about 20-40 more IBU

Use a combo of Citra and Amarillo in the last 5 minutes (.75 oz total), in the whirlpool(1.25 oz total) and for the dry hop. (2oz total)



These hop amounts are for a 5 gallon batch.



Use a clean fermenting ale strain around 65-70 degrees



Starting gravity should be 18.3 plato

Final gravity should be around 1.5-2.0 plato



Mimic classic Burton on Trent water profile

He didn't specify a mash temp and time, but 149-150F for 60-90 minutes should work.

sorry for getting back to you so late.

It came out very nicely. I just did a 2 gallon batch. I didn't get the pine aroma, mostly fruit.

Did you try it? What'd you think?

Thanks for the legwork on this. I've never had the beer, should you get a pine aroma/flavor?
 
On my first six pack, I got a huge pine aroma. I'm talking Christmas tree in the car huge. It was awesome. I just had my sister in law bring me a six pack from Frederick, MD yesterday and it had less pine and a bit more fruit (Citra), more like what I ended up with. Both are exceptional, though.

I have not had that one, but if you email the brewery and ask for the recipe, he'll get back to you. I met him in 2009 on a brewery tour. He likes home brewers. Just maybe schmooze him with how much you love the beer. ��

I'd really like to try this recipe but I'm not getting all the lingo here. For a 5 gallon batch, what quantities of each type of grain are required? Also, I see the hop additions for boil times and fry hop, but what is 'whirlpool'? I'm just not experienced with all the language, thank you.
