Made the 2XIPA from Brewing Classic Styles and loved the smell and taste of this batch, but after two weeks in the bottle, this thing is a notch above still. I've never had this happen before and I'm a little perplexed.

The only difference from my usual procedure is that rather than bottling with table sugar, I opened a bag of Brewer's Best priming sugar (corn sugar) from a NB kit and used 2.5oz for a 2.5 gallon batch. What gives?

Basics for this batch are as follows:
- OG 1.080
- FG 1.016
- Yeast: Safale 05
- This was dry hopped in secondary and is rather clear, but there is still sediment on the bottom of the bottle
- Stored for two weeks in the case at around 66º

Appreciate any help here folks!
