It should be fine. I would add it after fermentation has ended. It will still ferment almost entirely out (think of it like just adding sugar)- mostly just giving you more dryness to the beer, but some mild honey flavor and aroma will remain. I wouldn't go over about 10% of your fermentables as honey for a light beer like a kolsch. If you haven't made the beer yet, consider using honey malt instead- it will give you a nice honey tasting sweetness in the beer without drying it out, but without the aromatic qualities of using real honey. Finally, you can also add your honey at flameout.

BTW, the best way back then to get around the limit was to hit the return a few times then drop a period. Worked and you didn't have to strafe your keyboard to finish the limit asdfghjkl;'

I'm a throwback...for the sake of respecting the old ways
