Am I doing this right? I came up with this recipe in BeerSmith. The reason I have the extract in separate pounds is that I was originally going to add the 5lb with 10 minutes left, but BeerSmith put me way above style IBUs. I found on the last batch that using 5-10 drops of FermCap-S let me boil just over 4 gallons of wort

0.50 oz Centennial [10.00 %] (30 min) Hops 9.2 IBU
0.50 oz Amarillo Gold [8.50 %] (30 min) Hops 7.8 IBU

Sounds good. I didnt dryhop mine and it's just the right amount of bitter for me. Roughly 68IBU. Not a bad brew if I say so myself. Thing I'm going to try changing though in the next iteration is upping the mash temp from 148 to 153 to get a better overall mouth feel/heaviness. MAYBE add some cascade for dry hop. Perhaps add a little dextrin. Not sure yet, still got 5 gallons of beer to drink, haha.
