>>Ok this might be a dumb question but just needed to get it cleared. If I end up with losing more water than I thought can I just add the water to the fermenter and wort before pinching the yeast?

Yes. An added benefit is this will help cool your beer

>>I know it might water it down but just wanted some good brewers opinions.

as long as you hit your OG, you wont water down your beer

100% full. That's the absolute max and you have to be super careful pulling the bag out or you're losing wort all over the ground, plus it's damn heavy. Certainly a two-person BIAB, but I do 15 pounders all the time by myself.

Well I just picked up a 15 lb. grain bill for a Rochefort 10 clone ( an amped up version of the rochefort 8 on the dark strong recipe database.)

I should be fine with that poundage, right? Most of my adjuncts are candi sugars and syrups to make up the higher OG. Should be yummy! I'll make sure to practice with this saison first.
