I typically rehydrate my dry yeast. Not always, but usually. I've never used the T-58 yeast so I looked at the Fermentis site to just check out specifics. On the rehydrating instructions, it states to _stir_ for 30 minutes. I'm assuming on a stir plate. Does anyone do this?

rehydration instructions
Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 27°C ± 3°C (80°F ± 6°F). Leave to rest 15 to 30 minutes.
Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
Alternatively, pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 20°C (68°F). Progressively sprinkle
the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes, then mix the
wort using aeration or by wort addition.

You could but it is likely impractical with a ~110 ml volume of yeast slurry.

Just rehydrate as per the instructions.

An intermittent stir once in a while over the 30 minute period is what I do.

Yeah, does seem really impractical, and I've gone back and looked at several other of the fermentis yeasts I've used and they say the same. Lol, I guess I've always missed that. I have usually let it sit for 15 or so, stirred, sit another 15-30 stirred and pitched. Not sure why I've never noticed that in the instructions.
