I have pressed a few gallons of juice but all my demijons are in use. I currently have the juice sitting buckets like this

However, I am a bit worried that once the initial head subsides the cider will spoil when it comes into contact with the air. I have lids but I am not sure whether they are properly air tight. Will these be ok? Or should I stop being a cheapskate and just buy some more demijons?

Buckets like that, with a lid and an airlock, are fine. In fact, they're standard for brewing! You're right about not being airtight, though. So don't worry if you don't see airlock activity, it just means the CO2 is leaking out around the edges.

If you don't add some yeast soon, it will probably ferment anyway. Cider is like that.
