Fermenting in a stainless stock pot and lid?

I was wondering if there is any downfall in fermenting in a standard stainless 5gal stock pot with its glass li? I'm doing 3gal batches, so 5gal seems fine. Do you need a tight seal or is a lid good enough as it will allow head pressure to escape if it builds up too much. I seem to remember seeing people using saran wrap and a bungee a while back to create a tight seal, but wondering if that is needed.

Thoughts?

You should be able to do this, although I would probably put some aluminum foil over the lid. Both to keep light out and since most glass lids sit inside the rim, this will add protection from any "wild yeast" or infecting bugs from falling in.

In reality you can ferment in a straight open container, but for quality control it's tough to keep wild yeast and souring lacto. out.
