Hi I am new to brewing and want to do the ancient way which is in terracotta pots. This however is not airtight and so am concerned about the ferment getting mold. How to prevent this and how did ancient beer ever get made without airlock equipment??
Thanks

Ancient beer was made, but that doesn't mean it was that good- it was likely sour/contaminated all the time.

I use glass jars, glazed crocks, etc, for my food fermentatin as I want to encourage lactobacillus, but for my beer, wine, mead, cider, etc, I use glass, stainless or sanitized plastic with airlocks.

I would suggest that you make a few batches the modern way first. Once you know how to brew beer you can try your hand at things like open fermentation. You will find several threads on the subject on this forum.
