Reason for this post is that my favorite Cider yeast is Fermentis Safecider and is currently unavailable and not sure when it will be back in stock. You can buy in a 500g block but that is way more than I’ll ever use. It ferments dry then I back sweeten with 3 cans FJAC and keg to a 5 gallon batch. Awesome stuff, last 10 gallons went fast. I’ve tried many different yeasts (beer, wine, and cider) with pretty much good drinkable results.
I just put an order in for Fermentis Safe ale S-04 which is one I have yet to try. I have 15 gallons from last fall all fermented with Nottingham. Just kegged the first 5 gallons 3 weeks ago. Tastes really good with a slight beer flavor. still in my opinion, not as great as SafCider. Have a good day.
