Failed conversion solution?

Brewing with my brother, we discovered, right as we started the boil, that the thermometer was off. Knowing this could have affected the mash we checked with an iodine test and discovered it hadn't converted. The grain was already discarded. My solution was too grind more grain and reintroduce it to the wort after it cooled to put live enzymes back in. Anyone tried this? Will it work?
 
I smell an infection coming.

Why? We cooled it and put the grain in. We did get a good conversion. Went back to the boil after that. What would cause the infection?
