I just tasted my first attempt at a smash. It's awesome. I noticed a lack of extract smash's here so I thought I would share mine.

Simcoe Smash
American IPA

7.50 lb LME Pilsen Light (Briess) (2.3 SRM) Extract 100.00 %
1.00 oz Simcoe [13.00 %] (60 min) Hops 32.9 IBU
0.50 oz Simcoe [13.00 %] (30 min) Hops 12.6 IBU
0.50 oz Simcoe [13.00 %] (15 min) Hops 8.2 IBU
3.00 tsp Irish Moss (Boil 10.0 min) Misc
4.00 oz Malto-Dextrine (Boil 5.0 min) Misc
1 Pkgs Munton Fison Ale (Munton-Fison #-) Yeast-Ale

Sounds like it will end up being tasty. I may be wrong, but a Pilsen extract may be one of few extracts that are truly single malt based. Most have a few other grains mixed in.
 
I think extra light extract is often straight 2-row with maybe some Carapils as well.

Yeah I chose Briess Pilsen because it was the simplest malt and because I had never used it. Simcoe because I just fell in love with them on an India Red Ale we made. The beer tastes a little like a pale ale. I'm not good with tasting notes or picking out particular flavors so I can't describe it well beyond saying it's just good. My roommate said it had a slight grapefruit flavor and is more fruity than piney.

It's simple, clean tasting, and best of all cheap. My goal was to have a decent "base beer" to try new things with and get an idea of how different ingredients effect the final product.
