Explain why there is a difference and should I worry?

So you leave your brew in the growler with the bubbler on it and while it is like that, you don't have to pasteurize it. You can just leave it like this and let it age.

Yet if you put it in a bottle and seal it--and don't plan to put it in the fridge you are told you should pasteurize it.

Why?! Is the bubbler the saver of the brew that keeps it from being an issue? The sealing of the bottle does this in some way cause an issue that makes it go bad that having the bubbler on it keeps it from doing?

I have a cider I've kinda set it and forgot it. I have it infront of my AC so it tends to stay at 70 degrees. Figure it is aging. Do I need to worry about this? Can I just leave it in the growler with the bubbler till I have the time to bottle it and "pasteurize" it since I don't have room in the fridge for bottles.
