I was wondering if there was anything wrong with doing a partial boil without adding top off water. Seems like an easy way to have a smaller batch of a stronger beer, as long as you figure out the required yeast. I've noticed that if we don't tend to top off during the boil we need between 1.25 and 1.5 gallons of water at the end

There is nothing wrong with this, what is the desired starting and original gravities?

I actually do this for Big beers and I am all grain. I will fill my main pot to 7 gallons, then collect the rest in other pots. I do boil them all but top up the main pot from the others in the end!

Or just buy some DME to keep on hand, and use that to bump up the gravity while topping up with water. Seems a shame to go to all the trouble of a 60 minute boil, for less than 5 gallons.
