Here's what I have:
5 oz chocolate malt
8 oz flaked wheat
plenty of washed Wyeast 3724
Using those ingredients as inspiration, I'm going to brew a frankenstien dunkelweizen/saison.
Here's what I'm thinking about:
4 lbs Wheat Malt
4 lbs American 2-Row
8 oz Sucrose
8 oz Flaked Wheat
5 oz Chocolate Malt
1.0 oz Styrian Goldings @ 60 mins
0.5 oz Saaz @ 5 mins
0.5 oz Saaz @ 0 mins
Wyeast 3724 pitched at room temp. The temp should ramp up naturally and get plenty warm where I'm going to put it.
OG 1.052 (efficiency should be about 72%)
IBU 21
Any comments on the grist or hop schedule are appreciated. I've got plenty of time to tweak the recipe before I brew it.
