Does LME oxidize?

Since LME is just condensed wort, does it oxidize from oxygen exposure?

I'm just curious because I switched to AG a while ago, but recently brewed an oktoberfest ale extract batch for a party to save some time and I notice it seems to have that "stale" taste to it.

I definitely don't get this with my AG brews, so I was just wondering if it's possible that the LME I used was already oxidized before I even brewed my beer?

I know my procedure is sound, so I don't think I introduced oxygen into this beer myself. I suspect that the LME was stale.
 
I would think it can. If you need to store any for any period of time (now that you switched to AG), put a layer of vodka over it, cover, and put in the fridge.
