Ok I have a batch I plan on doing this weekend and I have a recipe that came with my kit that I bought off of a individual. The LME has a good date but I was worried about the grains. It was in a sealed zip lock bag, and it was already crushed. It is Carmel 20. I went to LBS to get new and all they had was Carmel 10. Is there much of a difference. And is there a way to tell if grain is no good?

Taste a little of the grain. If it is not stale it is still good. If it smells musty you should replace it. Caramel 20 is a little darker than 10. I doubt you would notice the difference unless you did one batch with the 20 and another with the 10 and compared them at the same time.
