Critique my first recipe, a chocolate mint milk stout

Looking to get some advice on my first crafted recipe, a chocolate mint milk stout. Looking to brew it here in 2 weeks.

Target OG: 1.071 || Target IBU: 45 || Target SRM: 43 || Target ABV: 6.2%

Grain bill:
9 lbs (61%) 2-row
1.5 lbs (10.2%) Pale chocolate
1 lbs (6.8%) Crystal 60
12 oz (5.1%) White wheat
8 oz (3.4%) Chocolate malt
8 oz (3.4%) Flaked oats
8 oz (3.4%) Roasted barley
1 lbs (6.8%) lactose (15 min boil)

Hops:
1 oz Horizon @ 60 min
.5 oz Nugget @ 15 min

Yeast: Wyeast 1056 American Ale

Secondary, all for 3 days:
8(?)oz espresso
8oz cacao nibs
2 oz peppermint leaves
1 oz Polaris hops

Some questions I have:
- I've heard suggestions that I should consolidate my White wheat and Chocolate malt into Chocolate wheat. Pros/cons?
- Will 8oz of espresso be too much? Not intended to be a coffee stout, just intended for a bit of depth.
- Cacao nibs will be added to about 4oz vodka & pitched. Should I do something similar w/ the peppermint leaves, or are those cool to go in by themselves?
