My local water supply chemistry sheet states the pH as 9.7. When I test it with standard pH strips, I'm seeing more like 6.5 - 7. Huge disparity.
I'm brewing in 7 hours with water adjustment calculations based on a pH of 9.7. Should I adjust my salt additions? Should I add nothing and get my hands on a water profile testing kit for future brews?
