Cold crashing with Notty's

So i am looking for a way to stop yeast production i am using the

recipe and will be racking around 1.010 FG and then adding the caramel syrup. for more sugar and 2 cans of applejuice concentrate.

It seems to carb up very fast, and i was really wanting to use PET 2 litres to store it in so it can age awhile. Is it possible to cold crash the 2 litres then store them in the basement to be enjoyed next summer? or am i just better off letting it sit in the secondary then bottling come spring/summer?
 
I'd probably cold crash it once it reaches the carbonation level where you want it.

but i should be ok with bombs? In retrospect with them being PET i could probably check on them once it warms up to see how much pressure is really there. AFter i cold crash them i should be able to throw them in the basement shouldnt i?
