I'm aware the potassium sorbate won't halt an active fermentation. And cold crashing presumably only works as long as you keep the cider indefinitely cold; move it from the fridge to the shelf and it will restart fermentation. But can you combine the two? Can you cold crash, rack off the settled-out yeast, and treat the tiny surviving colony left in suspension with PS to essentially halt fermentation and leave the cider at (approximately) its current sweetness (and ABV), confident that the remaining yeast will simultaneously be (1) too small in number of effect much fermentation and (2) incapable of reproducing?
