Going to brew a Chocolate cherry stout. ..it comes with a cherry extract but I heard it could taste like cough syrup. How would I do cherry juice instead? 5gal batch how much cherry juice and what kind?
Have you thought about using real cherries in a secondary fermenter?
I would get five or six cans of Oregon fruit cherries puree them a and add them to a secondary.
A couple weeks should be sufficient. Make sure your gravity reading is stable because fermentation will start again with the addition of the sugar in the cherries.
