I've been using one of these for about a year. It's the greatest thing ever for slicing cheese.
I've spent a lifetime eating cheese: a LOT of it. Most of that time I cut cheese with a steak knife. I've owned several cheese boards with the integrated wire thing that came down and sliced the cheese. They worked fine, not great, but invariably the wire broke, had to be replaced, etc. They are all gone due to this problem.
A year ago, I bought this knife from a door-to-door sales guy - one of my kids friends. He was trying to make $$ for college. This cheese knife has made my cheese life awesome. Until you have one, you won't realize how nice they are.
This one is expensive. I see others of similar design for far less. I'd say go with the design, get one of the cheapies, and if it doesn't work out get a better one. I think the wide-open design in the middle is the key.
