Hey guys first time cider brewer,
I was just given 70kg of very ripe cherries. I want to try a cider but have no clue on what to do. ( how much sugar what sg to singe what yeast. Do I cut the cherries?) also i would like this to be sweet and in going to keg it. any help would great thanks guys.

Pick your favorite cider from the recipe section. Make it. After primary fermentation rack to secondary on cherries. You can use potassium sorbate to stop further fermentation. Then you can back sweeten however you wish since your kegging and don't need the yeast to b bottle condition.
Ex.
Cherry apfelwein
Use Edwort apfelwein recipe
Rack on to cherries in secondary
Backsweeten
Keg
Remember don't back sweeten with fermentable sugar if you don't use the sorbate.
 
Oh and as for the yeast, some will use Nottingham others will use Lalvin brands I'm using wyeast 3711 for my cider right now. We will See how that goes
