Getting ready to prepare a starter for my third home brew. Its Caribou Slobber from Northern brew, My kit came with Safale s-04 dry yeast, but the instructions called for Danstar Windsor ale yeast or Wyeast 1332 northwest ale yeast. My question... I have on hand, a bottle of White labs California ale 001. I had great success with this in my dead ringer brew and want to use it instead of the Safale dry yeast. Is this a good idea or should I stick with the Safale product?
