I had a black and amber brew(1/4 recipe Spider imperial stout, 3/4 american amber recipe) that I brewed about 7 months ago. I managed to under carbonate by not using enough sugar. After a month in the bottle there was no carbonation.
I let it sit for 5 months in the basement. Cracked one open last night. It is perfectly carbonated. I was shocked.
It had great flavor 5 months ago, but it was flat. I didn't add anything to it, or swirl it, or shake it. I just figured that there was nothing to do but let it sit.
