Hello! I'm interested in brewing with walnut wood in lieu of oak. I'd like to toss a few walnut "spirals" into my brew - but! I was reading that the Juglone compound in BLACK walnut trees isn't great to injest (can be eaten, but will cause some apoptosis!). My question is - has anyone used black or other walnut wood varieties in a beer, and did you have any side effects? how did the beer turn out?
Thanks

I have never used walnut to brew but I have worked with it in the wood shop. Walnut has a very strong distinctive odor. I think it smells bad myself and odor is a large part of taste. I would not recommend it. If you do try it go easy. Maybe try it in a 1 gallon carboy. I am guessing there is a reason we have never heard of walnut wine or spirit aging barrels.
