This weekend extract brewing a recipe from George Hummel's new book.

Christmas wassail

Specialty grains:
1 lb Simpons dark crystal malt
1 lb Cara- Amber malt
.5 lb of Simpsonsw chocolate malt
Steeped at 150 for 30 minutes

6.6 lb Munton's Extra light
1 lb Breiss light DME
2 lbs amber molasses (Late addition)

60 minute boil
1 oz Kent Goldings bittering hops
1 oz fuggle aroma hops
1 tsp irish moss

Flavoring:
1 tsp ground ginger
3 whole cloves
3 cinnamon sticks
8 oz dried apples
4 oz raisins
put in mesh bag for last 15 minutes of boil.

2 l yeast starter from Wyeast 1945 neobritannia

2 week primary with blow-off first three days
3 month secondary
6 week bottle conditioning with more yeast added at bottling

Has anyone ever tried this recipe?
