Brewing cider

I was wondering when is the right time of year to brew cider? I had heard once that if you brew on columbus day, it'll be ready by labor day, but i can't find that anywhere right now.

Also is there any need for adding acid blend to the batch?

The best time to make cider (in my opinion) is during the fall when fresh apples are readily available.
