Hi, corner cutting has caught us out. We thought our wine kit had finished fermenting so racked off and added the sulphite pack. We then discovered the wine was a bit sweet for our tastes. Is there any way to get fermentation going again to give a dryer wine?
 
I'm hoping that this might help with my banana brew.

Is it possible to use the same tactic to increase ABV??

If there are any fermentables left, it will. If it's fermented out, no, and I wouldn't add any months after primary fermentation.
 
It's only on day 11, there's no audible action going on. I've swirled it to see if that has any effect, but nothing. I'm wondering if I should strain and taste..
