I was hoping to build up a starter from a bottle of Crooked Stave Vielle to make a 100% brett kettle sour, but I'm left with 2 questions:
1. If a beer had sach and and brett secondary, would it be safe to assume that everything lying in the bottom of the bottle is brett? Or would I build up a starter that would create a co-pitch? I'm sure there's variation in this...
2. Does Crooked Stave ever use sach? I can't find any info to confirm what exactly is in this beer.
