Anybody out there know at what temperature Brett goes dormant? I've been thinking about doing an experiment where I brew a beer with Brett and ferment in several smaller carboys (probably around five). I then plan to keg a carboy every two months and store each cold so I can do a vertical tasting in about a year. The idea is to see how Brett character changes the beer over time. In order for this to work, though, storing cold has to actually make the Brett go dormant. Does anybody know if this would work?
