Sorry this may be a dumb question but I am new to kegging. I want to be able to give bottles to friends and was planning on kegging to carbonate. So the plan was to bottle from the keg but if I do so should I let them know they need to go right into the fridge if they don't drink right away or are they shelf stable as is? I wasn't going to add sulfite and just cold crash in the keg. Or is it possible to heat pasteurize them after bottling to make them shelf stable?

If you are going to do this, you could:

Add sugar to bottle and bottle before carbonation.
Wait until all(most) sugars are gone(stable FG which should be achieved prior to carbing), force carb, then bottle off the tap.
force carb, bottle, and look into pasteurization units.. it is a function of heat vs. time
