Ok, here is my problem...
I've got a hefeweizen going now, its been in primary for a week, racked to secondary tonight. I know the general rule is 1-2-3, but next weekend I've got to go out of town, and I have no way to control the temperature while I'm gone (I have a rubbbermaid bucket with water and toss ice in it to keep the temp down). So, while I'm gone the brew temp can get pretty high.
Should I just go ahead and bottle and let it condition for 3-4 weeks? I can throw all the bottles in a cooler with some water and a bit of ice to keep the temperature somewhat reasonable over the weekend.
