I did a test boil with 6 gallons of water in my new kettle (10 gallon) this afternoon to see what the boil-off rate was going to be so I can plug that number into my equipment setup in the BeerSmith software. I put the lid on the kettle while the water was coming to a boil, and when it got there, I removed the lid and let it boil for an hour. It appears that I have boiled off 1.5 gallons during the 1-hour boil. That seems a little high to me. Ambient temperature is 60°F and slightly breezy today.

How much boil-off do you experience in a hour?

It depends an awful lot on the humidity. The last time I brewed with my 8 gallon aluminum kettle with a 14" diameter I boiled off 1.5 gallon in an hour, so your numbers seem reasonable.
