I think when it comes to electric smokers, they're a little less common than the Masterbuilt or the Brinkmann, but fundamentally work the same way.

So I'd do some searching and study online for basic methods for those electric smokers, and you can apply much of the same advise to a Big Chief.
 
Works great for cheese and pretty good for fish and jerky too. For larger cuts (i.e., pork and beef), it will take quite a bit of time and may not even get done in the winter time, requiring finishing in an oven.
