should a wit beer have more wheat than base malt when brewing an all grain recipe?
i'm basing this on the fact that wheat DME is usually 60% wheat 40%barely.

i just brewed a BIAB using 4lbs of belgian pilsen and 3.5lbs of pale white wheat.
the color is good it's in the keg secondary now pressure fermenting so i haven't tasted it. i was reading and some folks say wheat should be the larger part of the grain bill.
what gives?

For a witbier I like a classic grain bill. 50% pils, 35-40% unmalted wheat and 10-15% oatmeal. Good color, a nice haziness to it and really great head retention. 50/50 wheat/pils is complete acceptable, though unmalted wheat is ideal.
 
okay, i appreciate the advice...... i forgot i also used 1lb of quick oats...
and the normal spices.....& hops. i was just obscessing over whether the grain bill was correct. i'll try to get unmalted wheat next time around if sold at my LHBS.
my O.G. was low due to cutting the boil sooner than needed.
if it tastes as good as it looks i'll be happy.
