I have a bunch of wheat malt that has been stored in a vittle vault (At least 3 years old) and I'm hesitant to use it but don't want to throw it away. I want to use it to brew with, but keep the other ingredients to a minimum in the event that the wheat has gone bad.

I have a trippel fermenting now so will have some chimay yeast ready to go.

Any ideas of something creative to make?

Any reason a super high wheat content dubbel wouldn't' be good?
 
Make a gallon test batch with it. If it's good make another, larger batch, and you'll have a huge starter. If it's not good you're not dumping five gallons.

Really, if it's been kept cool and dry and hasn't been milled its probably okay.

Could just make a gallon of a lightly hopped American wheat beer. Lightly hopped you'll know what the grain tastes like.
