Start with 2.5 gallons water,mini mash grains at 155-160. hold for 30 minutes,remove grains.add dme and honey, bring to boil.
Add spices,1/2 tspn vanilla extract, and brown sugar at 20 minutes. Clove is 1/2 tblspn, cinnamon, ginger, and orange peel is 2 tablespoons each
Attenuate to 1.012
 
I've been looking for a winter warmer to do this weekend. I think I will follow in your footsteps.
 
I think it will turn out to be a nice beer. I only hit 1.070 as starting gravity, but that was due to stove and brew kettle inefficiency, IE: old gas stove, enamelware stockpot. I plan to buy a real brew kettle and propane burner for my next batch
 
I racked into secondary last night and took a reading, 1.012 on the hydrometer. That calculates out to around 7.7% ABV. Taste was very good. This will definately be a recipe to brew again (with better equipment)
 
Bottling tonight. With inefficient transfers etc, final yield was 4.2 gallons. TG was 1.011, a final ABV of 7.8%.
A test beer: Prominent orange in the nose, with some honey backing it up. A slight hint of vanilla. Light clove in the taste, barely discernable ginger zing.A little alcohol warmth. Mind you, this is just a pour from the bottling bucket. We'll see how it turns out after carbonation
I put some in 22 ounce bombers as gifts, and some in 12 oz bottles for aging tests.

This will be a definate do-over with all grain. Hell, I want to brew another extract batch with my new brew kettle/burner setup and age it for a year
