So, I'm thinking that when I get my new brew system set up I want to do an APA, probably an imperial/double since I like big beers. I've been reading about alternative hop schedules (continuous/burst/dry) and I thought to myself, "why not all three?"
Schedule 1: Continuous addition of Apollo, Calypso, Citra, Galaxy, Mt. Rainier, and Polaris (3 grams each) over a 60 min boil
Schedule 2: 3 grams each @ 20 mins left
Schedule 3: 2 grams each in secondary for 1 week
Malt bill wise I was thinking of using breiss extra special as my base with flaked spelt and Weyermann Abbey Malt for body and sweetness to offset the bitterness somewhat.
Opinions or thoughts?
