Hey,

I've made 2 batches of American Wheat Ale with US05, OG 1.044 and 1.040.
Since I plan to bring thefirst batch to a craft beer festival on July 30, I don't have enough time for usual fermentation period for wheat beers, which is 11 days + 5-7 days bottle conditioning in my case.
I plan to leave them for 5-6 days at the temperature of 18C and then let the temp rise to room to 20-22C for 2 days followed by cold crash at 4C for 2 days and then bottle conditioning for 6 days. The festival will take place on the 6th day of bottle conditioning.
I will leave the second batch (OG 1.040) as usual and compare the results later since I've never tried top shorten the fermentation and conditioning period.

What do you think of this plan?
So far I have always respected the 21 day period for fermentation and conditioning + minimum 2 weeks of bottle conditioning for my beers. In the case of weizens all this is 11+7 days.
