I have some wheat dme that I wanna use and I'm feeling experimental. Anyone have ideas/recipes for using wheat extract to make a more American/pale/amber ale? I'm imaging an amber weizen using a little more aroma hops and an unfiltered body. Like a reddish color hefe.

It sounds like you are almost describing a darker Blue Moon. (Indigo Moon?) To mimic that style you'd need oats, bittering hops only but then add orange peel and coriander at flameout. I'd be very interested in hearing about the results if you go that route.

I tasted an amber wheat beer in Portland last time I was there. It had more hops than I really liked, but the complexity was nice. Maybe use Citra a flavoring and/or aromatic? Wheat beers yell out for citrus.
