personally I like to use all my hops in a IPA at 20 min and later (hop burst) . This method puts all the hops in the flaver and aroma additions. I'd keep total IBU's the same but make my additions at 20,15,10 5,0, and dry hop.

I brewed an all Amarillo ale and I wish that I would have bittered it more. Amarillo is just such a fruity sweet hop that I need some bitterness to cut it. That might just be me though.

Do you think the 28 grams of columbus will provide enough bitterness? I'd like it to be balanced. Is there a better hop combination than amarillo and columbus? I know everyone likes simcoe but it's next to impossible to get.

I think that it should be sufficient. There is only one way to tell though!

my fave combo is amarillo and simcoe.

This sounds good to me. I made an all-amarillo IPA (that I really did enjoy) and I think the addition of some simcoe would help with the somewhat fruity/sweet flavor of the amarillo.

It looks good to me as well....personally I would try to add something with a rougher/spicier profile to go with the amarillo. A touch of chinook or nugget would set it off IMO. All amarillo is so mellow to me.

chinook or nugget in place of the columbus or in addition to. chinook/columbus/amarillo apa sounds like it'd be pretty tasty.
