I am looking for an all grain recipe that resembles New Castle without the fusion of two beers? Any help
 
I took your recipe and cut it in half for a 5 gallon batch. Question is, should I collect 6 gallon of wort for a 60 min boil? I normally boil of a gallon in 60 min. anyhow.

You should probably collect more like 6.04 gallons of so, not a big difference though. Hot wort is about 4% more volume than wort at 65F in your fermenter so you need to end up with 5.04 gallons after the boil.

Also I highly recommend that if you use S04 yeast that you ferment with the air ambient temp at 60 and the beer temp no higher than 64F. I really don't like the esters S04 throws at >64F. If you use dry yeast Nottingham works well in brown ale, just be sure to mash your grain high at like 156-158F so you get a sweeter, maltier finished profile like New Castle.
