Has anyone ever tried to make a clone of the Ale Asylum's tripel nova? It is a belgian tripel, 10% ABV, has nice fruity esters, but not over powering banana flavor. I might try and put something together, but I'm not sure what a good yeast would be to use. Any suggestions?
 
Tripel recipes don’t have too much variation. Most of the time they have lots of pilsner malt (~80%), some pure sugar (~20%), maybe a bit of wheat/Munich/aromatic, minimal hopping with something European-ish, Belgian yeast strain. I really like 3787/530, it is a bit fruity but not overly banana-y.

I haven’t had their version, but I would guess that it doesn’t stray too far from that general formula. You can certainly try emailing them to see if you get some yeast/fermentation info.
