Hi Brewers!
I want to do a smoked ale. I like to order from AHS as they are closer to me. They have a smoked amber, and a smoked ale. The smoked amber is higher in ABV, 5.5 compared to 3.9. The smoke flavor comes from the rauch malt in both kits. Of course i want to order the amber kit. But, instead of the rauch malt, i would like to replace it with their new mesquite 2 row. Thus, giving me a mesquite smoked amber. Can i do this? Also, instead of 1 lb. Will 2 lbs of the mesquite 2 row yield a better flavor? Or will it be too much flavor? Or, do 1 pound of each instead?
